The most important day (by Thithi) to fast in name of Lord Ganesha is Chaturthi.
The lunar Calendar divides a month into two, based on phase of waxing and waning moon. The phase of rising moon is called Shukal Paksha, while the phase of waning moon is Krishna (Krishna symbolises dark appearance) Phaksha. Thus there are two Chaturthi dates in each month - Krishna Praksha Chaturthi and Shukla Paksha Chaturthi.
On day of Chaturthi devotees observe fast and perform related Rituals to praise Ganesha and seek his blessings.
